Chemex

A simple brewing guide for a 2 person Chemex.

We recommend:

60g coffee/1L water for regular coffee.

70g coffee/1L water for decaf coffee.

  1. Prepare Your Equipment: Place a filter paper in the Chemex, with the stronger 3 sided layer alongside the spout. Rinse the filter paper with warm water, and discard the water.

  2. Measure and Grind Coffee: Boil the kettle. Grind 30 grams coffee to a medium-coarse grind size. Add the ground coffee to the filter and gently tap to level.

  3. Bloom:  Start the timer and pour 60 mL of water (just off the boil) over the grounds to saturate them. Let the coffee bloom for 30 seconds.

  4. Brew: Slowly pour the remaining water over the coffee in two equal pours, using a circular motion. Remove the filter paper and coffee before the water completely drains through. Enjoy.

Adjustments:

  • If the coffee tastes bitter and/or the brew time was too long, try a coarser grind.
  • If the coffee tastes sour and/or the brew time was too short, try a finer grind.

Ready to brew? We think the Chemex works great with all of our coffees, particularly the medium and lighter roasts.
