This rare microlot showcases the Papayo variety, a unique mutation originating from Acevedo, Huila. Named for its papaya-like shape and striking orange cherries, this coffee delivers a clean, fruit-forward cup with tropical sweetness.

Jairo Arcila is a third-generation coffee grower from Quindío, Colombia. After spending over 40 years managing a coffee mill, he now focuses on growing and processing specialty coffee with the help of his sons, Felipe and Carlos. Together, they have refined picking and processing techniques and introduced new exotic coffee varieties, including Bourbon Papayo.

After being harvested with strict ripeness selection, cherries are floated and hand-sorted before undergoing 30 hours of underwater fermentation, increasing the coffees sweetness and complexity. Grown in Quindío’s rich volcanic soil, it offers balanced tropical fruit flavours with a soft brown sugar sweetness.
