An unusual variety processed using the Honey Method, typical to Costa Rica, gives a coffee both familiar but surprising.

This coffee comes from the renowned Aguilera family, also known as the Hermanos Aguilera, who have cultivated coffee in Costa Rica for over 60 years. Specializing in unique varieties and innovative processes, the Aguileras transitioned to specialty coffee production more than 15 years ago, consistently earning accolades in the prestigious Cup of Excellence competitions.

ET-47 is an Ethiopian heirloom variety that gives complexity, fruity and floral notes that Ethiopian varieties are renowned for.

Honey processed coffees are common in Costa Rica as they require less water and produces less waste-water than washed process coffees. The black honey process used for this coffee adds a rich depth to its profile. After the outer skin is removed, the coffee seeds are dried with the maximum amount of mucilage left intact. This method leans toward the fruity, full-bodied qualities of natural coffees while maintaining the clarity and balance honey processes are known for.
