This coffee comes from renowned Colombian producer Wilton Benitez, a coffee innovator known for pushing the boundaries of post-harvest coffee processing. Grown at Granja Paraiso 92 in Cauca, this Castillo variety underwent a carefully controlled anaerobic fermentation before being decaffeinated using the ethyl acetate method. The result is a coffee that showcases high sweetness, clarity and structure.
Wilton’s innovative fermentation protocols involve the addition of specific microorganisms to influence flavour, and he uses advanced equipment to control variables like temperature, pressure and oxygen exposure. This coffee undergoes co-fermentation with Saccharomyces pastorianus, a yeast strain commonly used in lager brewing, which influences acidity, clarity, and the development of flavour during controlled fermentation.
This level of precision carries through to the final cup: bright, floral aromatics, citrusy acidity, and a smooth, brown sugar finish.
The coffee undergoes Sugarcane EA decaffeination at Descafecol, producing a decaf coffee that is 99.9% caffeine free.
Arabica coffee typically contains 1.4-1.6% caffeine by weight and decaffeination can remove most but not all of the caffeine.

The Sugarcane EA Decaffeination Process
-
1. Steaming
The raw coffee undergoes steaming to increase its porosity.
-
2. Soaking and Washing
The coffee beans are placed in tanks with spring water and Ethyl Acetate (EA) derived from the fermentation of sugarcane.
-
3. Caffeine Extraction
The caffeine bonds to the EA molecules, and the liquid in the tank is repeatedly refreshed. The process continues until sufficient caffeine has been removed from the beans.
-
4. Final Steaming and Drying
The beans are removed from the tanks for a final steam removing residual traces of EA. The coffee is then dried and bagged ready for shipping.

What our customers say about our Decaf coffees
I’ve always drank Colombia coffee and this decaf one is perfect! I can now enjoy it without the caffeine! It is great that Calm Coffee Rostery is focusing on coffees with less caffeine and the graphics are brilliant!
Ordered for pick up but received free delivery with a personal message from Will. Great coffee will happily use again
As a new mum I try a lot of decaf coffee! When this option was advertised to me on a late night scroll I bought it an thought nothing more of it. Until it arrived... this could be the best decaf ever. It tastes even better than it smells and it smelt delicious. I don't really want to leave this review because I don't want it to ever go out of stock!
It came quickly, which is an added extra!
A great decaf that has a rich, smooth flavour. Tastes fresh and like normal caffeinated coffee. I enjoyed mine as a long black and also with milk in an iced latte.
