Grown at 1,750 metres in the coffee-rich slopes of Pitalito, Huila, this Pink Bourbon decaf comes from Finca Las Flores, where brothers Johan and Diego Vergara have built on more than 30 years of family coffee farming. Their focus on experimentation and precise processing shines through, producing coffees recognised as some of the most exciting in Colombia.
After selective hand-picking, cherries undergo anaerobic fermentation and a brief thermal shock designed to intensify aromatic compounds. The coffee is then dried and decaffeinated at Descafecol using the natural sugarcane EA process. This special processing results in a decaf with unusual complexity - tasting notes of rose, citrus and ginger overlaying a soft sweetness.
Finca Las Flores was founded by Edilberto Vergara and Nubia Ayure, who established 16 hectares of carefully managed coffee. Since 2012, Johan and Diego have taken the farm forward, combining Diego’s expertise in production and fermentation with Johan’s vision for innovation. Today, the farm produces exceptional lots across outstanding varieties, positioning Las Flores as a benchmark in Colombian specialty coffee.
This Pink Bourbon decaf embodies that legacy, offering the craft and complexity of Las Flores in a caffeine-conscious cup.
The coffee undergoes Sugarcane EA decaffeination at Descafecol, producing a decaf coffee that is 99.9% caffeine free.
Arabica coffee typically contains 1.4-1.6% caffeine by weight and decaffeination can remove most but not all of the caffeine.

The Sugarcane EA Decaffeination Process

1. Steaming
The raw coffee undergoes steaming to increase its porosity.

2. Soaking and Washing
The coffee beans are placed in tanks with spring water and Ethyl Acetate (EA) derived from the fermentation of sugarcane.

3. Caffeine Extraction
The caffeine bonds to the EA molecules, and the liquid in the tank is repeatedly refreshed. The process continues until sufficient caffeine has been removed from the beans.

4. Final Steaming and Drying
The beans are removed from the tanks for a final steam removing residual traces of EA. The coffee is then dried and bagged ready for shipping.
